When it comes to Souvla, sometimes less is more
This super simple whole fish recipe will leave your friends in absolute awe of your Souvla Braai.
Accessories needed:
• Rotating Grill
Ingredients
• Recommended fish: Sea bass, dorado, or bream
• 1/4 cup olive oil
• 1/4 cup lemon juice
• 1 tablespoon grated orange zest
• 2 teaspoons dried oregano
• 1 teaspoon dried thyme
• 1 teaspoon ground allspice
• 1/2 teaspoon ground cumin
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1/4 cup olive oil
• 1/4 cup lemon juice
• 1 tablespoon grated orange zest
• 2 teaspoons dried oregano
• 1 teaspoon dried thyme
• 1 teaspoon ground allspice
• 1/2 teaspoon ground cumin
• 1 teaspoon salt
• 1/2 teaspoon black pepper
Instructions
Now that you have your ingredients ready, prepare a fire and make sure everyone is hungry!
Step 1: Firstly, in a shallow dish, mix all the marinade ingredients and whisk until well blended.
Step 2: Next, place the whole fish in the marinade, ensuring it’s coated on all sides.
Step 3: Cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavour penetration.
Step 4: While the fish is marinading, get your Souvla Braai fired up to medium heat.
Step 5: Then carefully secure the marinated whole fish onto the Rotating Grill.
Step 6: Once your fire is at good heat, gently lower the Rotating Grill onto the braai.
Step 7: Straightaway, set the motor to a slow rotation speed and let the magic begin.
Step 8: Resist the urge to open the lid frequently. Instead let the fish cook evenly, soaking up the smoky goodness of the Souvla.
Step 9: In this case, cooking time will vary depending on the size of the fish, but generally, a whole fish will take approximately 20-30 minutes, or until the internal temperature reaches 63°C.
Step 10: As the fish nears perfection, baste it with the remaining marinade, adding a final touch of flavour and moisture.
Step 11: Once cooked through, carefully remove the fish from the Rotating Grill and transfer it to a serving platter.
Step 12: Garnish with fresh herbs, a squeeze of lemon juice, and a drizzle of olive oil.
Step 13: Lastly, serve alongside roasted vegetables, salads, or your favourite braai sides.
