When it comes to Souvla, sometimes less is more
This super simple whole chicken recipe will leave your friends in absolute awe of your Souvla Braai.
Accessories needed:
• Large Souvla Skewers
Ingredients
• 1 whole chicken
• 1/2 cup olive oil
• 1/4 cup lemon juice
• 1 tablespoon dried oregano
• 1 teaspoon ground cumin
• 1 teaspoon ground coriander
• 1/2 teaspoon turmeric
• 1/4 teaspoon cayenne pepper
• 1/4 teaspoon salt
• 1/4 teaspoon black pepper
• 1/2 cup olive oil
• 1/4 cup lemon juice
• 1 tablespoon dried oregano
• 1 teaspoon ground cumin
• 1 teaspoon ground coriander
• 1/2 teaspoon turmeric
• 1/4 teaspoon cayenne pepper
• 1/4 teaspoon salt
• 1/4 teaspoon black pepper
Instructions
Now that you have your ingredients ready, prepare a fire and make sure everyone is hungry!
Step 1: Firstly, in a bowl, combine the olive oil, lemon juice, oregano, cumin, coriander, turmeric, cayenne pepper, salt, and black pepper.
Step 2: Then, add the whole chicken to the bowl and toss to coat.
Step 3: Cover the bowl and refrigerate for at least 30 minutes, or up to overnight.
Step 4: In the meantime, light your coals and get your Souvla Braai to medium heat.
Step 5: Thread the chicken onto the large Souvla skewer.
Step 6: Adjust the height of the skewer and place your skewer into the skewer holder so that the chicken is about 6-8 inches away from the coals.
Step 7: Cook the chicken for 30-40 minutes or until cooked through.
Step 8: Remove the whole chicken from the Souvla Braai and let it rest for 5 minutes before carving.
Step 9: Finally, serve with your favourite sides.
Tips
• Make sure to pierce the whole chicken all the way through with the skewer to ensure even cooking.
• If the chicken is browning too quickly, just adjust the height of the skewer.
• You can brush the chicken with the marinade while it is cooking to keep it moist and flavourful.
