For the pork skewers
Step 1:Â Put the salt, pepper, paprika, vinegar, and olive oil into a bowl, and mix them well.
Step 2:Â Cut the pork into cubes, each approx 3cm thick, and transfer it to the bowl with the marinade.
Step 3:Â Mix well with your hands to marinate all the pork pieces well.
Step 4:Â Cover the bowl with plastic wrap and refrigerate it for 4-6 hours.
Step 5:Â Transfer your souvlaki skewers to your braai and cook to till crisp and delicious or to your preferred cooking temperature.
Step 6:Â Remove the bowl from the refrigerator and thread the pork pieces onto your souvla braai souvlaki skewers OR 6 wooden skewers (Each wooden skewer will be about 80 g.)
To Assemble
Step 1:Â Once your meat has come off the braai, transfer the pitas to the flat grill. Allow one side to toast slightly before turning it over. Once turned over, baste the toasted side, and repeat the process with the other side.
* Only baste each side of the pita once toasted as this will prevent it from becoming soggy.
Step 2:Â Cut the tomato and the onion into slices.
Step 3:Â Take a pita, spread 20 g ketchup and 20 g mustard over it OR 40g tzatziki, add 2-3 tomato slices and a little onion, then add 150g or 2 pork skewers and a few fries, and wrap it well.
